  • 3 cups of One Degree sprouted spelt flour
  • 1 cup of warm water (not hot)
  • 2 tablespoons of extra virgin olive oil or coconut oil
  • 1 tablespoon of raw honey or agave syrup
  • 1 teaspoon of sea ​​salt
  • 1 tablespoon of active dry yeast
  • Optional:
    – 1 tablespoon of seeds (flaxseed, chia or sesame)

Instructions

  1. Activate the yeast:
    In a bowl, mix the warm water with the honey and yeast. Let it sit for 5–10 minutes until it foams.
  2. Mix ingredients:
    In a large bowl, add the flour, salt, and seeds. Stir in the yeast mixture and oil.
  3. Knead with intention:
    Knead for 8–10 minutes until you obtain a smooth and elastic dough.
    (Spelt requires less kneading than common wheat.)
  4. First rest:
    Cover the dough and let it rest for 60 minutes in a warm place until it doubles in size.
  5. Shaping the bread:
    Gently degas, shape the bread and place it in a greased mold.
  6. Second rest:
    Let it rest for another 20–30 minutes.
  7. Bake:
    Bake 180 °C (350 °F) for 35–40 minutes or until golden brown.
  8. Chill and enjoy:
    Let it rest before cutting to preserve its texture.
